I making a .pdf from InDesign with Chinese fonts.
But I'm finding that the Chinese fonts installed with OSX (STHeiti, STSong, etc)
cannot be embedded as they're protected. Why would OSX ship with fonts that are
unusable in their own products?
Can this be right? or am I doing something wrong?
Enlighten me please.

One can only speculate that Apple negotated a very cheap license for
them. Single Chinese fonts often cost hundreds or thousands of
dollars, so free fonts with OSX are a pretty good deal, mostly, but
this isn't necessarily going to suit pre-press needs.
However, you'd really need to ask Apple. InDesign and Acrobat are from
Adobe., so it isn't "their own products". Adobe sell Japanese and
Korean fonts, but not Chinese.

Another option would be to export the file from InDesign as a raster format
(i.e. JPEG or TIFF), or alternatively export the project as an EPS which can be
rasterized in Photoshop at a high enough resolution for print, or exported from
Photoshop as a Photoshop PDF for cross-platform file sharing.
