Is Capture for Me?

Can't find any help so I'm posting here, sorry. Please feel free to just direct
me...

I have a large primary source digitization project for a faculty member on my
campus. We want to maintain the exact look and feel of the original document,
but have it "searchable" - copy/paste able, etc. It reads as if
Capture is for me - but I'm not sure. Where can I find out EXACTLY what Capture
does. I've called Adobe twice now - no help in answering my questions.
