Need to extract certain fields from printed forms

Hello,

I have about 1200 water bills(6 months worth) for a condominium complex. I need
to capture\extract only a few fields of data from each form. These are the
computer generated and printed bills from the water company. I need to capture
the Date, Address, Amount, Water Usage (This year), Water Usage (last year at
this time) fields.

I can scan and OCR all the documents find, but now I need to only extract those
five fields of data from each bill and put them into an Excel file.

Is there a way to tell Acrobat 8 Pro to do this?
