Geoff,
First guess would be Menu Color Set chosen for the Subpicture Highlights. See:

(about 5 minutes into the tutorial your problem is [probably] discussed - RB).

What format are the Subpicture Highlights images in? Does that format allow
transparency? How is that transparency obtained, i.e. Alpha-Channel? Did you
build the Menu in Photoshop, or similar, or use a Template Menu and then modify
it in Encore?
Know that you're on deadline, but wonder if you also have Photoshop available,
to fix the problem. Within the allowed colors & opacity of the DVD specs.
(see link above) and I would guess that you will be well on your way with the
color aspect. Transparency might have to be addressed in the creation of the
image.

I've tried changing the menu color set to both automatic and menu default. In
automatic the image is pure white. In menu default it makes the icon orange and
when I click it, it turns red.
