| Five-minute clip takes 80+ hours to render? |

I've taken a movie file and, using the rate-stretch tool, compressed an hour of
footage down to a five-minute clip. I added music and tried to export it, but it
always takes 80+ hours to render and my PC crashes before it can finish (I left
it on for a few days, to no avail).

You need to know the limitations of any compression format you decide to use. I
don't use Xvid, so I can't help you there. Yes, you can choose any supported
compression format when you export.
You will also find links to many free tutorials in the Premiere Pro Wiki
<http://ppro.wikia.com> that will quickly show you how things are done in
PPro.
