I need to venture into a step I've never done before.

Assume a child's shirt with colors, shadows, stripes, whatever...

How can I change the green color to a blue color? I can't just mask it and 
fill. That would lose all the texture etc.

in addition to what others have said, you could also take a paint brush, set 
the merge mode to Color, probably set the brush transparency somewhat high, 
then start painting directly on the object you want to recolor...

you could mask off an object and then use the Selective Color tool to play 
with the colors... in cases like this, I would prefer to make a new objec 
from the masked item so I could use a clip mask and erase things that got 
recolored that I didn't want to retain the new color.

I used Replace Color on this shirt (no it is not my dog -- I googled 
"striped shirt" and found it).  I duplicated the background layer and

then used Replace color. I sampled the red and changed to turquoise. I 
had to fiddle with the range slider to target just the red stripes. 
Afterwards I used a clip mask to clean up any blue that affected other 
parts of the image (white stripes, nose and house).
