When I crop a small portion of a picture, I get the small crop in the middle
of a full screen -- small picture surrounded by a large white background.
How can I make the it crop to a screen just big enough for the image?

If I understand you correctly, what is happening is that you start out with
a large picture, crop it to a smaller picture, and you see the same
resolution window with thse smaller picture in the window. This is normal
behavior, and shows you what the effect of your crop is. You can zoom the
cropped picture to fill the window if you desire. A copy cropped picture and
new from clipboard should produce a new file with a relatively sized window.
