Tom,
It depends on what you have done.
If you installed the new version in a different directory the following
steps might help.
1. Delete IBConsole.xml from users\application date\borland\interbase
2. Copy IBconsole.xml from the directory where you have version
7.5.1.16 to the directory where version 8.1.0.270 resides.
3. restart the new version of IBConsole; it will pickup the
IBConsole.xml file.

Previous version was 7.5.0.16..

Is there a way to have the new version use the servers and databses that 
were defined in the previous version?

I renamed the existing IBConsole.exe to IBConsole.xxx in the \Program 
files\Borland\Interbase\Bin directory.
Copied the 8.1.0.270 version of IBConsole.exe into the same directory and is 
also where the IBConsole.xml is located.

Tom,
If you are doing this on Vista IBConsole(version 8 and above) probably
get confused. IBConsole expects the IBConsole.xml to be under
users\[username]\application data\borland\interbase\[instance name],
where [instance name] is gds_db if you have only one instance of IB.
Copy the IBConsole.xml to that directory.

Additional note....
I used ONLY the IBCONSOLE.EXE in my \program files\borland\interbase\bin 
directory.
NO OTHER files were copied from the directory where I unzipped the download 
file.
