I have Galsync up and working between two forests. One forest is a single
domain, the other forest consists of several domains.
My goal is to pull all the users from the multi-domain forest into the
single-domain forest. (which is not a problem). The problem is exporting
into the multi-domain forest at which point all domains from the multi-domain
forest are exported and cause duplicate e-mail addresses.

Bill,
By any chance do you have an MA for all of the domains withing your
multi-domain forest? If so, I believe that is your problem. There should be
only one MA for each FOREST, not each domain. In the configure Directory
Partitions property page, simply select all of the partitions that show up
there. If there is only one, make sure you go to 'show all' and refresh.
Also, you will need to select containers for each domain that represent OUs
that have user objects you want to sync. Finally, you must make run profiles
for each partition. A single step can only affect one partition at a time.
Simply go to present profiles and add additional steps for the other
partitions. I hope this helps!
