I need to put IIFP in a forest with Exchange 2007.
I will then configure this to sync with an Exchange 2000 forest.

It depends how You will define "work" :).

Basically Exchange 2007 is supported through Feature Pack 1 for ILM and 
there is no version of this package for IIFP. So You won't get native 
support through calling cmdlets from MA level.

Problem with Ex2007 is that there is no RUS to pick up accounts created 
with IIFP and populate all necessary attributes. So if You want objects 
provisioned from IIFP to Ex2007 org to become fully populated Exchange 
objects You will have to schedule additional, external task which will 
run once in a while and execute powershell cmdlets ... which will take a 
task of RUS.

If this is large organization this might be a bit resources extensive 
task as these cmdlets are calculating all object not only new one.
