More specifically, is it possible to uses WSUS to install something like
Acrobat Reader? I know this wasn't possible before, but I didn't know if

No, that didnt change. The technology available for that is System Center
Configuration Manager (former SMS) that you can use together with WSUS to
push updates + software

You can also distribute programs, only as MSI installers, with GPOs

No, WSUS if for updates only. However, Acrobat Reader used to have a network
kit to download for version 7 that let you create an MSI deployable package
to deploy via Group Policy. It worked great for AR 7 but they don't seem to
have one for AR 8?
