I've made a filter with only one rule - "from header contains <one
specific e-mail adress>" but it shows, aside from desired e-mails, a
whole bunch of extra random e-mails including some from newsgroups. Any
ideas?

I think it worked, thanks!
But now what's the "learning mode" role when it grabs whatever it
feels
like without any obvious criteria?

Learning mode learns from the content of messages added to and removed
from the filter. If you only add but don't remove messages from the
filter, it will quicky catch almost all messages because of common words
accouring in them.

I understand but one rule filter (contain specific address) with learning
mode on cought few hundred messages just after creation. It showed
messages it should show plus 200+ newsgroup messages that definitely
didn't contain mentioned criteria.

Aside the problem, you really don't need such filter.
Just create a contact for this person. On the contacts panel, click on it
and you'll see ALL the messages TO/FROM this contact. On the View button
you can set if you want to see only FROM messages, only TO messages or
BOTH.
Hope this help you.
