Questions About Print House 5

Can anyone tell me:  1) Is there any way to fill a text frame with
background color?  More than one article in the Help section says that
"any
object with a closed path can be filled . . ." but I can't find a way to
do
it.
2)  How can I change the default font and point size?
3)  How can I start a project specifying the number of pages, or specifying
an open-ended multi-page project?
