How do you do this? I tried going to Spreadsheet Page Setup but I couldn't
figure out how to add a new Paper Type. That's why I just changed it in the
Page Setup window of Spreadsheet Print.

Well - you can go back and forth between Page Setup and the Print Dialog
whichever one you start with.
If you make your plotter the Current printer, QP should offer you whatever
paper sizes the plotter offers.
