Since I use IE6 sp1 and not something else like ie6SP2 or IE7 or IE
whatever, my first question is, "Which IE?"

Stepping over yonder to the XP machine configured with SP2 briefly....

... I see in the IE Help function a set of instructions for how to
delete a particular entry for a password, as opposed to how to delete
all of the stored and encrypted information.

See IE/ Help - Index tab - search 'passwords' - see deleting function.

how do I remove a password from the IE password store?

I accidentally clicked on a yes instead of a no somewhere, and now IE thinks 
it has a password for a secure site I use. The password it has is not the 
actual, but that's another matter. As a rule I don't let IE store passwords, 
but now I get this annoying dialogue about the stored password is different 
blah blah, I just wanna blow it away, Anybody know where do I do that?

IF..you are IE7, and want to clear out all stored passwords, do this
Tools
....Delete Browsing History item
       ---- Passwords section
             ---- Delete passwords....

If you are IE7 and never want passwords saved...
To turn on the AutoComplete feature

  1.. In Internet Explorer, click the Tools button, and then click Internet 
Options.
  2.. Click the Content tab.
  3.. Under AutoComplete, click Settings.
  4.. De-Select.. the User names and passwords on forms check box.
