I'm building a project in the IDE, and the file lists in the Project View as
.smu
So, in the Documents menu, I un-check Unicode, and the file window now says
.sma
However, it still lists in the Project View as .smu, and the .sma version
doesn't seem to be part of the project... or what?

Yes, but this is a document-specific change, not a project one.

I have just had a look, and I can't say I can see how to switch them
either, other than by editing the *.smj file. That is probably the
easiest solution at this point. In the smj, just change the extension
for the source file from smu to sma (make sure the project is closed
first). Then save the changes tot he *.smj file and reopen the project.
