Hey Jason,
I found a couple that sound good. The first one sounds fantastic, but I
would use the 'gentle cooking process' noted in the others just to be on
the safe side.

General George Washington's celebrated eggnog recipe
1 quart cream
1 quart (whole) milk
1 dozen eggs
1 dozen tablespoons of sugar
1 pint brandy
1 cup rye whiskey
1 cup Myers Jamaica rum
1/2 cup sherry
Mix the liquor first, then separate your eggs and add the sugar to the yolks
while beating them. Mix well. Then add the liquor mixture, drop by drop at
first while slowly beating (this should take a while). Add the milk and
cream as you continue to slowly beat the mixture.
Beat the egg whites until stiff and fold slowly into the mixture.
Chill before serving with freshly ground nutmeg, and taste frequently.

Try Bols Advocaat. It's easier than making your own, and quite delicious.
