Harsha,
Config.sh uses the default template. The link I mentioned earlier talks about
them. They'll only take you so far, though.
You could also consider a silent-install script that should allow you to fully
configure your domain.
These are the only two approaches I know of for configuring initial settings.

Also, as I mentioned in my previous response, you could also
"post-process" the domain to get the exact settings you need after the
domain is created. The post-processing can be done with WLST or the deprecated
weblogic.Admin.
